Saint Louis, MO (April 8, 2013) – In Good Company, LLC, the company that brought you Café Ventana, Sanctuaria, Diablitos Cantina and Hendricks BBQ will be proudly represented by their talented bartenders at the Big O Classic Couples Cocktail Competition on April 14, 2013 at Salt Restaurant at 3pm, with 3 of the 10 finalists from In Good Company restaurants.  Mandi Kowalski and Joe Duepner will be competing from Sanctuaria, recently named BEST DRINK MENU in St. Louis by the Riverfront Times and BEST COCKTAIL MENU by Alive Magazine and Nathan Doyle will be competing from Hendrick’s BBQ, recently named Favorite New BBQ Joint by the St. Louis Post Dispatch and Best American Restaurant in the 2012 Best of Mid Rivers Poll.

 

The makers of The Big O ginger liqueur are looking for a classic cocktail to call their own – a stunningly delicious Signature Cocktail, highlighting the versatility and nuanced goodness of The Big O. The 10 finalists will present their Cocktails for the judges and guests. Hendricks BBQ’s ribs were noted by the Riverfront Times as having some of the best ribs in the city. We’ve never had them. How good are they?

Have you tried Hendricks BBQ’s ribs?

If not, the Riverfront Times says you’re seriously missing.

According to RFT, Hendricks’ ribs are one of 100 dishes “you must eat right now.”

From the RFT:

The ribs are a standout, succulent, yet you still must bite the meat from the bone — and then dig and scrape and suck to get all the morsels left behind. As it should be. Vanderbeck smokes both baby-back (half-rack $14, full $22) ribs and St. Louis-cut spare ribs (half-rack $12, full $20). The spare ribs are smaller but meatier. A mild dry rub gilds the pork’s natural essence. The baby-back ribs have a stronger woodsmoke profile — a mix of apple and hickory, to be precise — and a charred sweetness to the meat.

You don’t need sauce for these ribs, but if you must there are four available. The sweet sauce is thin and unmemorable. The hot is vinegar-sharp, though the actual heat level is moderate. The “House” is a conventional tomato-based sauce that carries a molasses sweetness and a mild tang. The “STL” sauce is my favorite, featuring malt-vinegar astringency and a lingering bite.

Welcome to Girl Walks Into a Bar, a weekly Gut Check feature that spotlights local bars and bartenders. This week, Kaitlin Steinberg profiles Keyan Still of Hendricks BBQ. Below is a Q&A with Still, followed by his recipe for a “Hendricks’ House Bloody Mary.”

Keyan Still is intent upon talking to everyone who sits at his bar. It doesn’t get in the way of his service. In fact, it adds to it.
If you don’t immediately know what you want, Still will ask you three questions: What’s your favorite wine? What’s your favorite beer? What’s your favorite cocktail?

Based on your answers, he will mix you the perfect drink. Seriously. Go challenge him.

Still started running the bar program at Hendricks BBQ (1200 S. Main Street, St Charles; 636-724-8600) when it opened in September 2012, and he’s been the driving force behind putting the small bar in the giant barbecue restaurant on the map.

Still was originally in marketing, but he grew tired of the cubicle life. While on a trip to Spain when he was 22, he tried alcohol for the first time in the form of a flaming shot. If ever there was a way to start a life devoted to alcohol, that has got to be it. Now, at 28, Still feels like he’s finally caught up to his peers who started drinking at a much younger age. And he also feels like he’s found his passion.

“It’s a learning experience,” Still says of mixing cocktails. “I’ve learned so much more about people and history through drinks than I ever did in school.”

His excitement about spirits is evident when he talks to customers, but also, it seems, when he talks to the rest of the bartending staff. As I was preparing to leave, one of Still’s bartenders pulled me aside to tell me about his boss.

“You know,” he said, “Keyan’s a really good teacher. He trained all the bartenders and servers. There are 300 people in here at some point, and all the servers have to know how to talk to people about the drinks. And that’s all because of his training.”

St. Charles’ own Hendricks BBQ will put its ribs up against more than 120 other restaurants from around the world during the Memphis in May World Championship Barbecue Cooking Contest in Memphis.

The event begins today and runs through Saturday.

On Hendricks BBQ’s Facebook page, the restaurant said, “Making our list and checking it twice! Headed to Memphis in May!!!! Wish us luck!!!”

Hendricks is competing in the ribs division, which has the most competition. Other divisions include whole hog and patio porkers.

Hendricks BBQ will proudly represent St. Louis at Memphis in May World Championship Barbeque Contest

Saint Louis, MO (March 18, 2013) – Hendricks BBQ, recently named Favorite New BBQ Joint by the St. Louis Post Dispatch and Best American Resturant in the 2012 Best of Mid Rivers Poll, is a unique blues themed barbeque restaurant located on Historic Main Street in Saint Charles, Missouri.  The newly opened BBQ restaurant has been accepted to participate in the 2013 Memphis in May International Festival World Championship Barbeque Cooking Contest, where over 250 barbeque teams from around the world will compete for ultimate barbeque bragging rights and over $110,000 in cash and prizes.  The barbeque cooking contest will be held May 16 –        May 18 at Tom Lee Park in Memphis, Tennessee.  The Hendricks BBQ Team, Wil Pelly, Executive Chef for In Good Company, LLC, Matt VanDerBeck, Pitmaster at Hendricks BBQ and T.J. We’re still suckers for the confections of our childhood, so when we eyed the Homemade ‘Moon-Shine’ Pies on the menu at Hendricks BBQ, we couldn’t deny our craving for a thick layer of marshmallow icing sandwiched between old-fashioned graham cracker cookies. And since the folks at Hendricks show great restraint in only dipping half of this decadent dessert in chocolate, we feel no remorse about double-fisting both moon pies that come in an order.

St. Louis restaurateur Gurpreet Padda has fond memories of his first taste of barbecue.

“I was a hardcore vegan for the first 18 years. Then when I was in medical school in Kansas City, on my way to school I would pass Gates Barbecue and see this long line of people and wonder, what’s that about?” Padda recalled. “When I finally went in there, I wasn’t a vegetarian anymore. I woke up in a daze, covered in barbecue sauce. As a restaurant owner, you want people to taste what you’ve been tasting, to experience what you’ve been experiencing.”

Padda and his business partner, Ami Hendricks, felt good barbecue was elusive in St. Louis.

“We couldn’t find a good sit-down barbecue restaurant in St. Louis, so we wanted to create something that was moderate in price, a good sit-down place with southern cooking,” explained Padda.

Using many of Hendricks’ own family recipes, the two decided to satisfy the area’s meat tooth by opening Hendricks BBQ on South Main Street in St. Charles. Hendricks BBQ joins several other local restaurants owned by the business partners, including Sanctuaria Wild Tapas, Café Ventana and Diablitos Cantina. Although the restaurants reflect great diversity in both menus and atmosphere, they share a common element.
